Southwest Chicken Salad

This recipe is one of my favorites! Easy and quick preparation, with many different variations to fit just what you like.
I found this recipe on With Sweet Honey and made some person preference changes. The trick to this recipe is that you season it to your taste. There's many different types of meals that you can make with this recipe, once you make the base chicken salad.
Option 1: Mix up the salad and enjoy with tortilla chips.
Option 2: With small taco tortillas, create mini chicken salad tacos. Add some sour cream, avocado, hot sauce or salsa.
Option 3: Lay the chicken salad mix on top of some rice, add toppings of your choice: sour cream, salsa, hot sauce, shredded cheese.
I recommend buying your rotisserie chicken from Costco. The amount of chicken you get compared to a regular grocery store rotisserie chicken makes a huge difference in how long you can make this recipe last.
Ingredients
1 rotisserie chicken (shredded)
1 can of corn
1 can of black beans
1 container of cherry tomatoes
2 limes
cilantro
salt
pepper
cumin
garlic powder
onion powder
italian seasoning
chili powder
mayo
shredded cheese
avocado
Optional:
tortilla chips
hot sauce
tortillas
sour cream
red onion
Instructions:
Start by shredding your rotisserie chicken. Once shredded, add into a large bowl.
Drain can of corn and place in bowl with chicken.
Place can of black beans in a medium pot, on medium heat. Season black beans with garlic powder, onion powder, and italian seasoning. Once beans have simmered for 5 minutes, remove from heat and strain out the juice. Once strained, place in bowl with chicken.
Cut whole carton of cherry tomatoes in half, and place in the bowl with the chicken.
Cut 2 limes in half and juice into bowl with the rest of the ingredients.
Drizzle mayo over the top of the ingredients of the bowl.
Chop cilantro
Season with salt, pepper, cumin, chili powder, garlic powder, onion powder.
Mix together all ingredients in the bowl.
Taste the mixture.
Optional: Dice half of a red onion and add into mixture.
