Sausage Gnocchi Soup

This recipe is my new favorite! The ingredients for 5 servings of this soup cost less than $25 dollars.
This recipe is high in fats and due to the cream bases, the sausage, and the broth. A way to make it on the healthier side would be to incorporate more vegetables.
Personally I think it's a great soup to add to the recipe book, as its delicious, cheap, and perfect for cold weather months. I found it on Instagram @foodiefromvt and will be making again and again.
Ingredients:
1 lb italian sausage
12 oz gnocchi
2 medium carrots, diced
1 yellow onion, diced
4 cloves garlic, minced
4 cups chicken broth
1 15 oz can diced or crushed tomatoes
1 1/2 tbsp tomato paste
1 sp oregano
1/2 tsp salt
1/4 tsp pepper
1 pinch red pepper flakes
2 cups spinach
1/4 parmesan cheese
2/3 cup dairy: cream whole milk, coconut milk
Recipe:
Bring a large pot with a drizzle of olive oil over medium heat. Add the sausage and cook breaking apart with a wooden spoon until browned and cooked through.
Add onion, garlic, and carrots and saute until onion is transluecent and vegetables tender; about 4-5 minutes. Stir in oregano, red peper flakes, salt, and pepper and tomato paste. Continue stirring to allow the tomato paste to deepen in color.
Pour in the tomatoes and broth. Bring soup to a boil then reduce to a simmer, uncovered for 10-15 minutes. Stir in the gnocchi and let simmer for 3-4 minutes until gnocchi is al dente. Reduce heat to low add the milk and kale and stir until combine.
